The method comprises the following steps: mixing, metering into the mixer (2); mixing and wetting the raw material mixture within the mixer (2) to form a raw dough; transferring to the dough preparation machine (3), kneading in the dough preparation machine (3); shaping the raw dough in the dough preparation machine (3) to form a dough strip (9); transferring the raw dough to the dough press (4); venting the raw dough, compressing the raw dough; shaping the raw dough, in particular into pastas; and drying the pastas. The invention also relates to a device (17) for carrying out the method described above and to the use of the device (17).
